This Apple and Spinach Salad is so perfect for this summer heatwave we are having across Northern Europe. This is the first of a few salad recipes I want to share this season but there’s something extra special about this recipe.
Apple and spinach sounds an odd combination but trust me it just works. The wholesome spinach and leafy greens add a nutrient drenched base, the apples add the perfect sweetness that blends like a dream with the vinaigrette, and the crunchy walnuts, add the perfect finishing touch, if desired.
But most importantly for me, it’s a salad that is free of onions and garlic (and other problem ingredients) that is safe for those that suffer from IBS, GERD/GORD, Acid Reflux, Gastroparesis and/or Heartburn. It’s also vegan, dairy-free and gluten-free.

Apple & Spinach Salad For GERD, Gastroparesis And Gastritis (Vegan + Dairy Free + Gluten Free)
- 1 Apple
- 3 handfuls Spinach & Salad
- 1 Celery Stalk
- 1/2 tbsp Maple Syrup
- 1 tbsp Balsamic Vinegar
- 1/2 tbsp Olive Oil
- Sea Salt
- 1 handful Chopped Walnuts
- Take an apple cored and slice into thin slices
- Chop the celery into tiny chunks
- In a large bowl, add the apple slices, spinach (washed) and celery
- In another bowl make the vinaigrette with the sea salt
- Take the vinaigrette and pour onto the salad mix in the bowl and mix together thoroughly
- Serve immediately or store in the fridge for a few days. Fancy an extra crunch? Add chopped walnuts if your GERD and acid reflux can handle nuts.
As a result of being diagnosed with Scleroderma last year, I developed very severe acid reflux that is essentially the burning sensation in your chest or oesophagus, that is the most common symptom of acid reflux and gastroesophageal reflux after eating certain foods.

It’s in salads that I often find many triggering ingredients and so this simple salad strips everything back without missing out on a real balance of nutrition, flavour and texture.
This is something I just adore on sunny days like we are having. However, as with anyone who suffers from GERD, this condition can be very individual, so double-check the ingredients for any triggers you know your body has. For example, I can’t always handle nuts but lately, I’ve been better so I’ve added the walnuts but you can also skip them or add something else.
